Summer Slim-Down Series: Protein Berry Muffins!

I am obsessed with her PROTEIN BERRY MUFFIN recipe because it is the perfect Balanced Beauty,“MUFFIN MAKEOVER!” 
Many muffins advertised in stores or restaurants make people think they are making a healthy choice for breakfast or a snack, but often times they are LOADED with unhealthy calories, made with excess fat, butter, salt and sugar. Fact: A Starbuck’s Apple Bran Muffin contains 34 grams of sugar, equivalent to 17 SUGAR PACKETS!!!! Between the ingredients and the massive portion sizes, starting your day with this “healthy choice” can set you up with sluggish energy and ravenous eating later!
You want to start your morning with healthy protein, carbohydrates that fuel you with feel-good energy and if you have sugar, it should be coming from all-natural fruit (and not listed as the first ingredient)! This recipe is made with almond and quinoa flour, making them a healthy, delicious alternative…
The best part- they are GLUTEN FREE!


Protein BERRY MUFFINS 

Yields: 12 muffins

Mix all of the following in a bowl
(Best to separate wet and dry ingredients and then mix the two together, but it really doesn’t matter how you do it)! 
 
4 organic eggs
1/2 c coconut nectar
1 tsp sea salt
1/2 c coconut oil
2 tbsp raw agave
1 c almond flour
1 c quinoa flour
1 tbsp baking powder
1 tsp baking soda
1/4 c unsweetened almond milk
1 c frozen organic raspberries
1 c frozen organic blueberries
Bake at 350 degrees for 35-40 minutes, until golden brown and cooked through.

Eat them for breakfast, before or after a workout or for dessert! Crowd pleasers for the entire family- Great for kid’s lunches or after-school snacks!
