Creamy Cajun Comfort Chicken #BalancedBeautyStyle

Hi Beauties,

As we enter the cold winter months and are staying isolated indoors – I am sure like me, you’re craving some hearty, delicious, comfort food!

This recipe is inspired by spicy, cajun-soul food that hits the spot and fills you up- leaving you totally happy and satisfied. While made with some heavier ingredients, they are all Balanced Beauty-approved and gluten-free!

Trust me when I say, every bite of this dish will have you saying, “Mmmm…this is sooo good. Mmmmm….I can’t believe I actually made something this good.” “Mmmmm…I don’t want this to end.” (no joke)…. It’s the kind of dish that makes you look like a super-chef, even though it’s super-simple!

Not to mention, spicy food is great for you to consume in the winter months to naturally heat up your body and keep you warmer– There are also TONS of health benefits to adding some “spice to your life!”


According to a study published by Penn Medicine, there are 4 main Health Benefits to eating spicy food:

  • Spicy foods may promote weight-loss and kick-start your metabolism

INGREDIENTS:

  • Chicken breasts sliced or cut into cubes
  • 1/4 teaspoon garlic powder
  • Cajun seasoning (use a no or low salt variety) or Montreal Chicken Seasoning
  • Cayenne Pepper
  • Paleo Flour for dredging
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1/4 cup sun-dried tomatoes
  • 1/4 cup chicken broth
  • 1 cup organic, heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper to taste

DIRECTIONS:

  1. Slice the chicken for thinner cutlets or cut into cubes. Sprinkle them with salt, pepper, garlic powder, and 1/2 teaspoon of the Cajun seasoning (If you don’t have seasoning, Montreal chicken seasoning + a sprinkle of cayenne Pepper).  Once seasoned, dip in a bowl filled with paleo flour to coat the chicken.

  2. Add the butter and oil to a skillet over medium-high heat. Once the pan is hot, add the chicken. Cook until it’s nice and golden. Take the chicken out of the pan and set it aside.

  3. Add the minced garlic, sun-dried tomatoes, and chicken broth to the pan. Let it bubble for about 30-40 seconds or so.

  4. Reduce the heat to medium and stir in the cream and sprinkle in some Cajun seasoning (a little goes a long way so don’t add too much– Especially if using cayenne- just a touch will be enough)!

  5. Add the chicken back into the pan and cook for another 5 minutes or so, until the sauce is thickened and the chicken is cooked through. Sprinkle the parmesan cheese over top (or stir it into the sauce). Season with salt & pepper as desired for taste and serve immediately.

    SPICE UP YOUR KITCHEN WITH SOME CAJUN-SPICED CHICKEN!!!

    NOTE: The chicken will taste super tender after cooking in the sauce. Serve over white or brown rice to compliment any spiciness, and soak up the amazing flavors from the sauce. Pair with a small green salad and you have the perfect Balanced Beauty dinner– ENJOY!!!
